  1. 1 tablespoon 15ml Cold butter

  2. 4 Salmon fillets - (6 to 8 oz ea)

  3. Salt - to taste

  4. Freshly-ground black pepper - to taste

  5. Several sprigs fresh dill - plus

  6. 3 tablespoons 45ml Chopped fresh dill

  7. 2 cups 474ml Chicken broth or water

  8. 2 teaspoons 10ml Sugar

  9. 1 teaspoon 5ml Salt

  10. 1/4 cup 59ml White vinegar or white wine vinegar

  11. 1 cup 62g / 2 1/5oz Vidalia onion - chopped (small)

  12. 1/2 Seedless cucumber - chopped

  13. 2 Radishes - chopped

  1. Preheat oven to 400 degrees.

  2. Rub the bottom of a shallow baking dish with cold butter. Arrange salmon in dish. Season the fish with salt and pepper. Add broth and a few sprigs of dill to the pan. Roast the fish 12 to 15 minutes.

  3. Combine sugar, salt and vinegar in the bottom of a medium bowl. Add chopped onions, chopped cucumber and radishes. Sprinkle in 3 tablespoons chopped dill and toss the mixture to coat in vinegar, sugar and salt.

  4. Remove fish from the oven. Spoon pan juices over fish and carefully transfer to individual plates or platter. Top fish with relish and serve.

  5. This recipe yields 4 servings.
