  8. 2 tb Granulated sugar

  9. --MUFFINS--

  10. 1 1/2 c QUAKER Oats uncooked

  11. -(quick or old fashioned)

  12. 1 c All-purpose flour

  13. 1/2 c Granulated sugar

  14. 1 tb Baking powder

  15. 1/4 ts Salt (optl)

  16. 1 c Skim milk

  17. 2 Egg whites or -1 egg, slightly beaten

  18. 2 tb Vegetable oil

  19. 1 t Grated lemon peel

  20. 1 t Vanilla

  21. 1 c Blueberries

  22. -fresh or frozen

  23. 12 muffin cups with paper

  24. baking cups or spray bottoms only with no-stick

  25. cooking spray. For topping, combine 1/4 cup oats and sugar; mix well. Set aside. For muffins, combine

  26. 1-1/2 cups oats, and remaining dry ingredients; mix

  27. well. Add combined milk, egg whites, oil, lemon peel

  28. and vanilla, mixing just until dry ingredients are

  29. moistened. Gently stir in blueberries. Fill muffin

  30. cups almost full. Sprinkle with reserved topping,

  31. 20 to 24 minutes or until light

  32. golden brown. Let muffins stand a few minutes;

  33. remove from pan.
