  5. 1/2 lb Turnips

  6. 1/2 lb Potatoes

  7. 1/2 lb Carrots

  8. 1/2 lb Tomatoes

  9. 2 Bunches fenugreek leaves

  10. 1/2 lb Onions

  11. 1 c Oil

  12. 2 ts Garlic and ginger ground

  13. Together

  14. 2 ts Ground fresh green chillies

  15. 2 ts Salt

  16. Wash all the vegetables, peel as necessary, cut into pieces, and set

  17. aside.

  18. Heat oil and fry all the vegetables until they are light brown.

  19. Chop onions finely and mix together with all the ground spices.

  20. Add onions and spices to the vegetables and fry together until light

  21. brown. Add salt.

  22. Add 1/2 cup hot water and cook over slow fire until vegetables are done

  23. and thick gravy forms. Take care not to overcook or stir too vigourously

  24. to avoid mashing the vegetables.
