  1. 1 lb 454g / 16oz Snow peas - or sugar snap peas

  2. 2 Mangoes - peeled and thinly

  3. 1/2 cup 73g / 2.6oz Red pepper - finely diced Dressing

  4. 3 tablespoons 45ml Lemon juice - fresh

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/4 teaspoon 1 1/3ml Pepper

  7. 3 tablespoons 45ml Hazelnut oil

  8. 3 tablespoons 45ml Vegetable oil

  9. 3/4 cup 109g / 3.8oz Hazelnuts; chopped - toasted

  1. Recipe Instructions In large pot of boiling water, blanch peas for 1 minute; or until color is set. Immediately drain and refresh under cold running water. When cool, combine in bowl with mangoes and red pepper To make dressing: In a small bowl, whisk together lemon juice, salt and pepper. Whisking constantly, add oils. blend in nuts and pour over snow pea mixture. Toss gently to coat.
