  3. 1/2 Green bell pepper - seeded and chopped

  4. 1 Garlic clove - minced

  5. 1 Italian-style stewed tomatoes - - (14 1/2 oz)

  6. 1/4 lb 113g / 4oz Boneless skinless chicken breast - cubed

  7. 2 tablespoons 30ml Dry red wine

  8. 1 cup 237ml Penne or ziti

  9. 2 tablespoons 30ml Grated Parmesan cheese

  1. Recipe Instructions In a large nonstick skillet, heat the oil. Add the onion, pepper and garlic; cook, stirring as needed, until softened, about 5 minutes. Add the tomatoes, chicken and wine; bring to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, 5 to 6 minutes. Meanwhile, cook the penne according to package directions. Drain and place in a serving bowl. Add the chicken mixture; toss to combine. Serve, sprinkled with the cheese.
