  1. 4 Ripe plantains - peeled, and Bias-sliced 1/2" thick

  2. 2 tablespoons 30ml Vegetable oil

  3. 4 tablespoons 60ml Light brown sugar

  4. 2 tablespoons 30ml Fresh orange juice

  5. 1 tablespoon 15ml Honey

  6. 2 tablespoons 30ml Coarsely chopped cilantro

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Preheat grill.

  2. Brush the plantains with the oil and grill until caramelized, about 2 minutes on each side.

  3. In a small bowl, combine the brown sugar, orange juice, honey and cilantro and brush on plantains.

  4. Season to taste with salt and pepper.
