  1. 200 Fresh garlic cloves (1 qt)

  2. 1 Onion; diced

  3. 1 Red pepper; diced

  4. 1 1/4c Apple cider vinegar

  5. 1/4c Fresh ginger, minced

  6. 1 tb Mustard seed

  7. 1 ts Salt

  8. 1/4ts Crushed red pepper

  1. + Coarsely chop garlic.

  2. Combine all other ingredients and bring to a slow boil.

  3. Reduce by 1/3, add garlic and cook about 10 minutes.

  4. Cool and serve.
