  1. 1 1/2 pounds ground turkey breast

  2. 1 package frozen chopped spinach --

  3. 10oz, thawed,drained

  4. 1 cup quaker oats -- quick or old fashion uncooked

  5. 1/2 cup finely chopped onion

  6. 1/2 cup shredded carrots

  7. 2 egg whites -- or 1 egg -- lightly beaten

  8. 1/3 cup fat-free milk

  9. 1 1/2 teaspoons Italian seasoning blend

  10. 1 teaspoon salt -- optional

  11. 1/4 teaspoon black pepper

  1. Preparation : Heat oven to 350 degrees F. Combine all ingredients; mix lightly but thoroughly. Shape into 9 x 5 inch loaf in 13 x 9 inch baking pan. Bake 1 hour or until thermometer registers 170 degrees F and center is no longer pink. Let turkey loaf stand about 5 minutes before slicing.
