  1. 5 qt.s sliced cucumber s

  2. 1 red onion , sliced

  3. 2 red pepper s, sliced

  4. 12 garlic cloves

  5. 11/3 c Kosher salt

  6. 8 c sugar

  7. 6 c cider vinegar

  8. 1 T ground turmeric

  9. 1 T celery seeds

  10. 5 T mustard seeds

  11. 2 t ground ginger

  1. Put cucumbers, onion and peppers in a pan and mix with the kosher salt. Refrigerate for three hours, then drain off liquid and set aside.

  2. Combine sugar, vinegar, and seasonings and bring to a boil. Add cucumbers, onion, peppers, and garlic and bring back to a boil. Remove from heat and can immediately.
