  1. 2 tablespoons Safflower oil

  2. 1 cup Onion, chopped

  3. 4 cups Potatoes, peeled and diced

  4. 1/2 To 1 tsp. basil

  5. 1 teaspoon Salt

  6. 1/4 teaspoon Pepper

  7. 1 pounds Frozen haddock fillets

  8. 10 ounces Kernel corn, frozen or canned

  9. 12 ounces Can evaporated skim milk

  1. Heat oil in a medium-sized soup pot and saute onion until limp but not browned. Add potatoes, basil, salt, pepper and 2 cups water. Bring to a boil, reduce heat and simmer for 15 minutes.
