  1. 24 Chicken wings - about 4 pounds

  2. Salt - optional

  3. Freshly ground black pepper

  4. 4 cups 948ml Vegetable oil

  5. 1/4 cup 49g / 1.7oz Butter or margarine

  6. 2 teaspoons 10ml Hot sauce - up to

  7. 5 tsp

  8. 1 teaspoon 5ml White vinegar

  9. ** blue cheese dressing **

  10. 1 cup 237ml Mayonnaise

  11. 2 tablespoons 30ml Onion - finely chopped

  12. 1 teaspoon 5ml Garlic - finely minced

  13. 1/4 cup 36g / 1 1/3oz Parsley - finely chopped

  14. 1/2 cup 118ml Sour cream

  15. 1 tablespoon 15ml Lemon juice

  16. 1 tablespoon 15ml White vinegar

  17. 1/4 cup 36g / 1 1/3oz Blue cheese - crumbled

  18. Salt and pepper - to taste

  1. Cut of tips and separate each wing at the joint. Sprinkle wings with salt and pepper to taste. Heat oil in deep-fat fryer or large heavy pot.

  2. When it is quite hot, add half the wings and cook about 10 minutes, stirring occasionally. When wings are golden brown and crisp, remove them and drain well. Add remaining wings and repeat process.

  3. Meanwhile, melt butter in saucepan, add hot sauce to taste and vinegar.

  4. Pour hot mixture over wings and mix well to cover.

  5. Serve with Blue Cheese Dressing and celery and carrot sticks. Blue Cheese Dressing - Combine above ingredients and chill for one hour before serving.
