  2. EGGPLANT SALAD (VEG TIMES)

  7. 1 lb Peeled eggplant, cubed

  8. 1 lb Tomatoes, chopped

  9. 2 ts Cayenne

  10. 1 t Salt

  11. 1 tb Olive oil

  12. 1 tb Tomato juice

  13. Boil eggplant in water for 30 minutes. Drain well &

  14. squeeze out excess moisture. In a large skillet over

  15. moderate heat, saute eggplant, tomatoes, cayenne &

  16. salt in olive oil & tomato juice for about 5 minutes,

  17. mashing with a fork until somewhat smooth. Chill

  18. before serving.
