  1. Preparation : combine soy, sake, sugar, ginger, garlic, and sesame oil-mix well pour over chicken, cover, and chill for 60 minutes to 2 days drain chicken well, pat dry, and reserve marinade heat oil in a skillet, over a moderate flame add chicken and brown lightly on all sides pour reserved marinade over the top bring to a boil, reduce heat, and simmer until chicken flesh is no longer pink in the middle, basting often remove from pan and slice thinly arrange onto serving dishes reduce marinade to thicken ladle a small amount over chicken garnish as desired serve hot, over rice, with remaining marinade to the side
