  1. 12 Tart green apples

  2. 24 Green tomatoes (small)

  3. 4 Onions (medium)

  4. 3 cups 480g / 16oz Seedless raisins - (1 lb)

  5. 4 cups 948ml Cider vinegar

  6. 2 1/2 cups 400g / 14oz Brown sugar - (tightly packed)

  7. 2 tablespoons 30ml Salt

  8. 1/2 teaspoon 2 1/2ml Crushed dried chilies

  9. 1 1/2 tablespoons 22ml Curry powder

  10. 3 tablespoons 45ml Mixed pickling spices

  1. Wash, core and chop the apples; wash, blanch, peel and chop the tomatoes; chop the onions.

  2. Place apples, tomatoes and onions in a preserving kettle and add raisins, vinegar, sugar, salt, red pepper and curry powder. Put the pickling spices in a cheesecloth bag and add to the kettle. Boil, stirring occasionally, for 25 minutes, or until apples are transparent. Remove fruit with a slotted spoon.

  3. Boil syrup rapidly until it thickens. Discard pickling spices, return the fruit to the syrup and bring to a boil. Remove from the heat and ladle into hot, sterilized jars and seal immediately. Process in boiling water bath for 10 minutes.
