  1. 1/2 cup shortening

  2. 1/2 cup white sugar

  3. 1/2 cup packed brown sugar

  4. 1 egg

  5. 1/2 teaspoon vanilla extract

  6. 1 cup all-purpose flour

  7. 1/2 teaspoon baking powder

  8. 1/2 teaspoon baking soda

  9. 1/2 teaspoon salt

  10. 3/4 cup rolled oats

  11. 1/2 cup flaked coconut

  12. 1/2 cup miniature semi-sweet chocolate chips

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, cream together the shortening, white sugar and brown sugar. Mix in the egg and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the batter until well blended. Mix in the oats, coconut and chocolate chips until evenly distributed. Roll dough into walnut sized balls and place 2 inches apart onto prepared cookie sheets. Bake for 12 minutes in the preheated oven, or until edges are lightly browned.
