  2. Title: Frozen Pineapple-Almond Salad

  5. 1/2 c blanched almonds

  6. 1 1/2 c crushed pineapple --

  7. 1/2 c maraschino cherries --

  8. : drained

  9. 1/2 c chopped dates

  10. 24 marshmallows

  11. 8 oz cream cheese -- softened

  12. 1/4 c mayonnaise

  13. 1 c whipping cream

  14. *Buy blanched, toasted salted almonds or blanch your

  15. own by dropping 1/2 cup almonds into boiling water.

  16. Turn off heat and let almonds stay in water only one

  17. minute. Remove to paper towels to drain thoroughly.

  18. With fingers, rub almonds until peel comes off.

  19. 1. Coarsely chop almonds, set aside. 2. Drain

  20. pineapple and reserve syrup. 3. Cut drained cherries

  21. 4. Cut dates

  22. 5. Cut marshmallows into eighths and set aside. 6. Combine in

  23. bowl 3 tablespoons of pineapple syrup and the softened

  24. cream cheese. Beat until fluffy, then blend in 1/4 cup

  25. mayonnaise. Gently fold in pineapple, cherries, dates,

  26. almonds and marshmallows. 7. Chill bowl and beaters

  27. then whip the cream until it piles softly. Gently fold

  28. the cream into the fruit mixture. 8. Turn into mold

  29. and freeze until firm, about 3-4 hours.
