  1. 1/4 cup plain GREEK yogurt

  2. 1 teaspoon packed light brown sugar

  3. 1 medium Bosc pear

  4. 2 tablespoons honey

  5. 1/2 teaspoon freshly squeezed lemon juice

  6. 1/4 teaspoon grated fresh ginger

  7. 6-8 Trader Joe's Triple Gingersnaps, crumbled into pea-size pieces (about 1/4 cup)

  1. Blend Greek Yogurt and brown sugar and whisk to combine; place in the refrigerator. Peel, core, and chop the pear into small dice, then place in a small bowl. Add honey, lemon juice, and ginger and stir to combine. Spoon 2 tablespoons of the yogurt mixture into the bottom of 2 (4-ounce) glasses. Top with 1 tablespoon of the crumbled gingersnaps, then 2 tablespoons of the pear mixture. Repeat to make 2 complete layers in each glass. Serve.
