  1. Potato Salad, South Indian style

  2. 1 lb potatoes

  3. salt to taste

  4. 1 1/2 cups plain yogurt

  5. 2 tsps oil

  6. 1 tsp black mustard seed

  7. 1 tsp cumin seed

  8. 1 tsp black gram dal (urad dal), washed

  9. 1 tsp Bengal gram dal (chana dal), washed

  10. 1 red chilli, halved

  11. 1/4 tsp asafoetida

  12. a few curry leaves

  13. Peel and dice 1 lb of potatoes (Yellow Finn or Yukon Gold are best).

  14. Boil until barely tender. Drain, sprinkle with salt and set aside

  15. to cool.

  16. Heat 2 tsps oil in heavy frying pan or skillet. Add the mustard

  17. seeds, cumin seeds, black gram dal, Bengal gram dal, halved red

  18. chilli, asafoetida powder, and a few curry leaves.

  19. When the mustard seeds splutter, add the diced potato and toss

  20. together until potato pieces are coated. Add a few drops of water

  21. and cover for a couple of minutes. Transfer to large bowl and let

  22. cool completely.

  23. Add the well-mixed yogurt and blend thoroughly.

  24. Serve cold or at room temperature.
