  1. 1 1/4 cups zucchini - shredded and packed -

  2. 3/4 cup Splenda - granular -

  3. 1/2 cup brown sugar -

  4. 1/3 cup applesauce - unsweetened -

  5. 1 egg -

  6. 1 teaspoon vanilla -

  7. 1 teaspoon baking powder -

  8. 1 teaspoon baking soda -

  9. 1/2 teaspoon salt -

  10. 1 teaspoon cinnamon

  1. Preheat oven to 350° F. Place the shredded zucchini into a piece of cheesecloth and squeeze out any liquid (this is very important). Set aside. In a small mixing bowl, combine the Splenda, brown sugar, applesauce, egg and vanilla. In a medium-mixing bowl, combine the flour, baking powder, baking soda, salt and cinnamon. Pour the wet ingredients into the dry ingredients and stir to combine. Fold in the zucchini. Spray a 1-quart loaf pan with butter flavored cooking spray. Pour the mixture into the loaf pan and bake for 40-45 minutes or until a toothpick inserted into the middle comes out clean.
