  1. 4 1/2 c. sugar

  2. 1 1/2 c. shortening

  3. 3 egg s

  4. 3 tsp. vanilla

  5. 3 c. (1 large can) pumpkin (Recommended: Western Family)

  6. 7 1/2 c. flour

  7. 3 tsp. baking powder

  8. 3 tsp. baking soda

  9. 1 1/2 tsp. salt

  10. 3 tsp. cinnamon

  11. 3 c. miniature chocolate chips

  12. 3 c. chopped walnut s

  1. Cream sugar and shortening. Add eggs one at a time and beat well between each egg. Add vanilla and pumpkin. In a separate bowl, combine dry ingredients. Add to batter and beat until just combined (do not overmix). Fold in chocolate chips and walnuts. Using 2 tbsp. trigger scoop, scoop onto parchment paper-lined baking sheet. Bake at 400° for 8-10 minutes (cookies will be slightly wet, but will continue to cook after removing from the oven).
