  7. 10 tablespoons unsalted butter (1 1/4 sticks)

  8. 1/3 cup honey

  9. 1/3 cup milk

  10. 1/4 teaspoon almond extract

  11. 2 1/2 cups whole almonds (I used sliced) -- toasted

  12. 3/4 cup light brown sugar -- packed

  13. 3 cups flour

  14. 1 teaspoon ground cinnamon

  15. 3/4 teaspoon baking powder

  16. 1/4 teaspoon baking soda

  17. 1/2 teaspoon salt

  18. Almond Glaze

  19. 1 cup confectioners' sugar

  20. 1/2 teaspoon almond extract

  21. 6 teaspoons water

  22. Melt butter in a small suacepan. Stir in honey, milk and almond extract; set

  23. aside to cool.

  24. Combine 1 1/4 cups of almonds and the brown sugar in a food processor.

  25. Process just until nuts are texture of coarse meal.

  26. Add cooled butter mixture to the processor. Process until smooth. Add

  27. flour, cinnamon, baking powder, baking soda and salt. Processor just until

  28. mixture is combined.

  29. 1 1/4 cups almonds. Line a

  30. 9 x 9 x

  31. 2 square baking pan with plastic wrap. Place dough in pan & pat level.

  32. Place in freezer for 20 minutes or until firm.

  33. Heat oven to 350. Lightly coat baking sheets with nonstick vegetable spray.

  34. Remove the firm dough from pan. Starting at any side, cut 1/4 slices.

  35. Arrange on the prepared baking sheets, placing them 1/2 apart.

  36. 350 oven for 18 minutes or just until golden. Transfer to wire

  37. racks to cool. Drizzle with glaze.

  38. For glaze: Mix together confectioners' sugar and almond extract in a small

  39. bowl. Gradually stir in 6 teaspons of water or just enough to make a thin

  40. glaze. Makes 3 dozen cookies. - - - - - - - - - - - - - - - - - -
