  8. 1 tablespoon canola oil

  9. 1 small yellow onion -- diced

  10. 1 medium red bell pepper -- seeded and diced

  11. 1 cup diced zucchini

  12. 1 teaspoon paprika

  13. 1/2 teaspoon ground cumin

  14. 1/2 teaspoon salt

  15. 1/2 teaspoon black pepper

  16. 1 1/2 cups water

  17. 2 scallions -- chopped

  18. 1 cup couscous

  19. 15 ounces canned red kidney beans or chickpeas -- drained

  20. Makes 4 servings.

  21. This makes an enticing bed for grilled vegetables, curries, and hearty stews.

  22. In a medium saucepan, heat the oil. Add the onion, bell pepper, and 7 minutes. Add the seasonings and cook for minute more. Add the water and scallions and bring to a boil. Stir in the

  23. couscous and beans, if desired, cover, and remove from the heat. Let stand for 10 minutes.

  24. Fluff the couscous before serving.
