  5. 1 Lb (2 cups) navy beans --

  7. 2 1/2 qt water

  8. 1 meaty ham bone --

  9. 1 1/2 Lbs

  10. 1 clove garlic -- minced

  11. 1 sm bay leaf

  12. 1 c cubed potatoes

  13. 1 c celery -- thinly sliced

  14. 1 c onion -- finely chopped

  15. 1 c carrots -- cubed

  16. : salt and pepper -- to taste

  17. Boil the beans in the water for 2 minutes before

  18. removing them from the heat to let stand for 1 hour.

  19. Then add the ham bone, garlic and bay leaf to the

  20. beans, and cover and simmer them for 2 hours or until

  21. the ingredients are almost tender. Add the vegetables

  22. and salt and pepper to taste, and simmer them for 1

  23. hour longer. Remove the ham bone, cut off the meat and dice it to add to the beans. Reheat the soup almost to

  24. boiling, then remove the bay leaf.
