  1. 1/2 c Fresh Snow Peas Cut Into 1 Inch Diagonal Pieces

  2. 1 sm Zucchini, Thinly Sliced

  3. 2 Cherry Tomatoes, Quartered

  4. 1 tb Pine Nuts Toasted

  5. 1 tb Minced Shallot

  6. 1 1/2 ts Red Wine Vinegar

  7. 1 ts Safflower

  8. 0R Vegetable Oil

  9. 1/8 ts Pepper

  10. Place Peas in A Vegetable Steamer Over Hot Water. Cover, Steam 2 Min. OR Until Crisp Tender. Drain & Rinse Under Cold Water. Combine Peas, Zucchini, Tomatoes & Pine Nuts in A Medium Bowl. Combine Shallot, Vinegar, Oil & Pepper; Mix Well With A Wire Whisk. Pour Over Vegetables & Toss Gently To Mix Well. Cover & Chill Thoroughly. (Fat 6. Chol. 0.)
