  1. 1 Tbls Olive Oil

  2. 2 Cloves Garlic; crushed

  3. 4 Chicken Breasts; boneless & skinned

  4. 1 1/4 pounds Fresh Mushrooms (Porcini); julienned into ; inch strips

  5. 1 cup Chicken Broth (Preferably Homemade)

  6. 2 1/2 teaspoon Fresh Mint; chopped

  7. cup Parmesan Cheese; grated

  8. cup Heavy Cream; optional

  1. In a skillet over medium high heat, add oil and saute garlic two minutes; add chicken and saute five minutes on each side. Add julienned mushrooms, broth and fresh chopped mint. Cook, partially covered about 7 minutes, or until mushrooms are tender. Stir in cheese; cover and cook 3 minutes. Add cream and cook 2 minutes.
