  1. INGREDIENTS:

  2. 2 tablespoon vegetable oil

  3. 1 medium onion, chopped

  4. 1 large clove of garlic, minced

  5. 1 tablespoon curry

  6. 1 tablespoon tomato paste

  7. 15 oz can of chick peas drained, reserving

  8. 3 tablespoon liquid

  9. 1/2 tablespoon lemon juice

  10. 1/2 teaspoon salt

  11. fresh black pepper

  12. crushed red pepper, optional to taste

  13. 1 tablespoon non-hydrogenated vegan margarine

  14. DIRECTIONS:

  15. I don't know how authentic this is, but I whipped it up last night. It tasted great to me.

  16. 2 minutes. Add chick peas, liquid, lemon juice, salt, and black pepper. Simmer

  17. 5-6 minutes, stirring occasionally. Add red pepper to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until peas are softened and dish is hot. Serve over rice.
