  1. 500 g pork mince , trim pork

  2. 1 teaspoon paprika

  3. 1 teaspoon ground ginger

  4. 1 teaspoon cumin

  5. 1 teaspoon cinnamon

  6. 1 onion , chopped

  7. 1 carrot , sliced into thin strips

  8. 1 green pepper , deseeded and sliced

  9. 1 (410 g) can tomatoes , crushed, keep juice

  1. Heat a heavy based pan, add the mince, paprika, ginger, cumin and cinnamon. Stir fry 5 - 6 minutes.

  2. Add the onion, carrot, green pepper and tomatoes with juice.

  3. Stir until boiling, lower heat and simmer for about 10 minutes.

  4. Serve with couscous and a salad.
