  2. 1 stick unsalted butter

  3. 1 large onion -- chopped

  4. 2 cups converted rice

  5. 4 cups boiling water

  6. 1 teaspoon curry powder

  7. 1/2 teaspoon ground cumin

  8. 1/8 teaspoon cayenne

  9. 1/8 teaspoon turmeric

  10. 1/8 teaspoon ground ginger

  11. 1/8 teaspoon pepper

  12. 16 ounces frozen peas -- thawed

  13. 3 cups cooked ham -- diced

  1. In a large pot, melt butter over medium-high heat. Add onion and cook, stirring, until softened, 3 to 4 minutes. Add rice and cook, stirring, until rice turns translucent, about 5 minutes. Stir in boiling water, curry powder, cumin, cayenne, turmeric, ginger, and pepper. Heat to boiling and reduce heat to low. Cover and simmer 25 minutes, or until all liquid is absorbed. Stir in peas and ham. Cover and cook over medium-low heat 5 to 7 minutes, or until peas and ham are hot.
