  1. Eggplant Rollups

  2. 2 eggplants (medium)

  3. 4-5 Scallions

  4. about 8 oz ricotta cheese

  5. black pepper

  6. red pepper flakes

  7. garlic powder

  8. salt any other spices you like

  9. Slice the eggplant into the thin strips (the long way) lightly salt

  10. the eggplant slices and let sit on paper towels for about 1/2 hour.

  11. In the meantime, thinly slice the scallions and mix with the ricotta.

  12. Preheat oven at 450 F or use the broiler. Sprinkle the ricotta

  13. mixture with the spices to taste.

  14. Rinse the eggplant slices with paper towels to get the salt off.

  15. Lay slices on an oiled baking sheet. Bake/broil until they are

  16. 10-15 minutes

  17. Drop about 1 tsp of the ricotta mixture at one end of the eggplant

  18. slice. Now, roll it up. Put back into the oven for about 3-5

  19. minutes.
