  6. --CRUST--

  7. 1 1/2 Pk Graham crackers, crushed

  8. 6 Butter, melted

  9. 1/3 C Sugar

  10. --FILLING--

  11. 24 Oz Cream cheese, softened

  12. 5 Jumbo eggs, separated

  13. 2/3 C Sugar

  14. 2 Env. knox gelatin

  15. 1/2 C Light rum

  16. 2/3 C Fresh lime juice

  17. 1 1/2 Ts Fresh grated lime peel

  18. 1 1/2 Ts Fresh grated lemon peel

  19. 1 Pt Whipping cream

  20. 1/2 C Powdered sugar

  21. Mix crust ingredients and pat into bottom of springform pan. Bake at

  22. 10 minutes. Soften gelatin in small saucepan with

  23. 3/4 cup

  24. water. Stir egg yolks into sugar. Add to gelatin mixture with lime

  25. juice, rum and rinds and cook over med. heat. stirring constantly

  26. until mixture thickens and bubbles. Cool. Beat cheese in large bowl

  27. until light and fluffy. Slowly add gelatin mixture and blend well.

  28. Beat egg whites until soft peaks form. Add powdered sugar and continue beating until stiff peaks form. Fold into cheese mixture.

  29. Whip cream and fold into cheese mixture. Pour into crust and refrigerated several hours or overnight. - - - - - - - - - - - - - - - - - -
