  1. 3 Ancho chiles - seeded, and hand-torn into pieces

  2. 2 tablespoons 30ml Chili powder

  3. 2 tablespoons 30ml Ground coriander

  4. 1 tablespoon 15ml Ground cumin

  5. 1 tablespoon 15ml Sweet paprika

  6. 1 tablespoon 15ml Dried oregano

  7. 1 tablespoon 15ml Garlic powder

  8. 1/4 teaspoon 1 1/3ml Ground cinnamon

  9. 1 teaspoon 5ml Sugar

  1. Recipe Instructions Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in a mini food processor and pulse to a powder. Add the remaining ingredients and buzz again to combine.
