  2. Brie & Basil Croquettes

  7. 1/4 c (1/2 stick) unsalted butter

  8. 1/4 c All purpose flour

  9. 1 c Milk

  10. 9 oz Chilled Brie or Camembert

  11. -cheese, rind removed

  12. -cut into 1-inch chunks

  13. 1/4 c Finely chopped fresh

  14. -basil

  15. 2 Large eggs

  16. All purpose flour for -coating

  17. 2 c Dry bread crumbs

  18. 2 T Olive oil

  19. Melt butter in heavy medium saucepan over medium heat. Add 1/4 cup

  20. flour and stir until light golden, about 2 minutes. Remove from heat.

  21. Gradually whisk in milk. Return pan to heat. Simmer gently until

  22. very thick but still pourable, about 4 minutes. Add cheese and basil

  23. and stir until cheese melts, about 2 minutes. Remove from heat.

  24. 1 egg. Pour into 10-inch

  25. diameter pie plate. Press plastic wrap onto surface of cheese

  26. mixture to prevent skin from forming. Chill overnight.

  27. With floured hands, form cheese mixture into walnut-size balls. Dust

  28. cheese balls with flour. Chill until firm, about 1 hour. Press each cheese ball into 3/4-inch-thick round. Place remaining egg in small

  29. bowl and beat to blend. Place crumbs in medium bowl. Dip cheese

  30. rounds into egg, then into crumbs, coating thoroughly. Heat oil in

  31. heavy large skillet over medium-high heat. Working in batches, fry

  32. cheese rounds just until brown, about 1 minute per side; do not

  33. overcook. Drain on paper towels. Serve warm.
