  1. 2 1/2 lbs 1135g / 40oz Fryer

  2. 1 teaspoon 5ml Oregano Salt & pepper to taste

  3. 1 cup 237ml Water

  4. 2 Lemons - juice of

  5. 1 Garlic clove - - minced

  6. 1/2 Butter

  7. 2 tablespoons 30ml Olive oil (rbck34e)

  1. Recipe Instructions Rub chicken w/juice of 1 lemon, salt & pepper. Mix remaining lemon juice w/oregano, garlic, & additional salt & pepper, & rub cavity of chicken. Place in pan w/butter & water, and brush w/oil Bake in oven 450F. until golden brown; lower heat to 350F. Bake for 30 min, basting and turning frequently. Variation: Omit butter. Season chicken as directed above. Place in roasting pan w/1c. water. Mix together 1/2c. olive oil & 2T. tomato paste; pour over chicken and bake.
