  1. 1 lb 454g / 16oz Chitterlings mixed with - pork (ask butcher)

  2. 10 Shelled walnuts - (puree with, a little oil)

  3. 1/2 cup 118ml Olive oil

  4. 4 Garlic cloves - (crushed)

  5. Salt and pepper to taste

  6. 1/4 teaspoon 1 1/3ml Red paprika

  7. 1/2 cup 118ml White wine

  8. 1/3 cup 53g / 1.9oz Raisins

  9. 1 lb 454g / 16oz Spaghetti

  10. Grated cheese

  1. *Clean and chop chitterlings. Heat oil in pan. When hot fry chitterlings and pork with garlic, paprika and pepper for 5 min. Blanche raisons, drain and add to pan with walnut puree. Add wine. Stir well and puree in blender until smooth. Serve over hot cooked spaghetti. Top with cheese.
