  1. + Directions : When shopping, look for nicely shaped, smooth, firm potatoes with unblemish 10 TO 12 NEW POTATOES (ABOUT 1-1/2 POUNDS) YIELD 4 SERVINGS; 135 PER SERVING. To Prepare: Wash potatoes; pare narrow strip around center if desired. To Boil: Heat 1 inch water (salted, if desired) to boiling. Add potatoes. Cover and heat to boiling; reduce heat. Boil 20 to 25 minutes or until tender; drain. To Steam: Place steamer basket in 1/2 inch water (water should not touch bottom of basket). Place potatoes in basket. Cover tightly and heat to boiling; reduce heat. Steam 18 to 22 minutes or until tender. To Microwave: Pierce potatoes of similar size with fork to allow steam to escape. Place potatoes, with larger potatoes to outside edge, and 1/4 cup water in 2-quart microwavable casserole. Cover tightly and microwave on high 10 to 12 minutes, stirring after 5 minutes, until tender. Let stand covered 1 minute; drain.
