  1. 8 pounds Cucumbers -- about 12 large

  2. 1/4 inch slices 8 larges Onions -- cut 1/8 inch

  3. Sliced 4 larges Green peppers -- sliced

  4. cup Salt -- canning

  5. 6 cups Vinegar

  6. 6 cups Sugar

  7. 2 teaspoons Celery seed

  8. 2 teaspoons Mustard seed

  9. 1 teaspoon Ground turmeric

  1. In a large container, combine cucumbers, onions, green peppers and salt. Add enough cold water to cover. Chill for 2 hours. Drain and rinse. In a large kettle, combine remaining ingredients; bring to boil. Add cucumber mixture; return to a boil. Ladle hot into hot jars, leaving ¼ in. headspace. Adjust lids. Process for 10 min. in a boiling-water bath. Yield: 10 pints. Recipe By : Country Woman
