  1. Banana Butter

  2. 3 cups (about 10 medium) bananas

  3. 1/4 cup lemon juice

  4. 6-1/2 cups sugar

  5. 1 bottle (6 oz) liquid pectin

  6. Thoroughly mash bananas. Measure 3 cups bananas into a large

  7. saucepan. Add lemon juice and sugar; mix well. Bring to a hard

  8. rolling boil; boil hard one minute, stirring constantly. Remove

  9. from heat; quickly stir in pectin. Ladle into clean, hot jars.

  10. Seal. Makes 8 or 9 half-pints.

  11. I have added 2 drops of yellow food coloring to a batch. It is

  12. good as a sauce on ice cream.
