  6. 1/4 c Ghee

  7. 1 lg Onion, sliced

  8. 4 ea Garlic cloves, chopped

  9. 1 ea 1 piece ginger, chopped

  10. 1 tb Garam masala

  11. 1 t Turmeric

  12. 1/4 ts Dried red chilies

  13. 2 lb Potatoes, cubed

  14. Salt

  15. 1/2 c Water

  16. 2 lb Mushrooms, halved

  17. 1 c Peas, fresh or frozen

  18. Heat ghee in large pot. Add onion & garlic & fry till

  19. browned. Stir in ginger & fry for 2 minutes. Add

  20. garam masala, turmeric & chili, stirring for a minute.

  21. Stir in potatoes, salt & water. Mix well, bring to a

  22. 8 to 10 minutes. Stir occasionally.

  23. Add mushrooms & peas & stir. Cook, covered, for 5 to

  24. 8 minutes. Remove lid, raise heat & cook till

  25. 3/4 of

  26. water has evaporated. Stirring constantly. Serve

  27. with dal.
