  1. 4 Catfish fillets

  2. 1 tablespoon 15ml Butter or margarine - melted

  3. 2 tablespoons 30ml Lemon juice - divided

  4. 1 teaspoon 5ml Dill weed - divided

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1 teaspoon 5ml Zucchini - cut into (small)

  7. 1 Carrot - cut into 1 Bon-like strips*

  8. 1 tablespoon 15ml Mayonnaise

  9. 1 Rice pilaf mix - - (4 1/3 to 7 1/5 oz.)

  10. Prepared according to - - package directions

  1. Brush catfish with butter and sprinkle with 1 tablespoon lemon juice, 1/2 teaspoon dill weed, and salt. Broil fillets 8 to 10 minutes or until fish flakes easily with fork. Stir zucchini, carrot, mayonnaise, remaining 1 tablespoon lemon juice, and remaining 1/2 teaspoon dill weed into hot rice. Cover and let stand 5 minutes. Serve vegetable rice with broiled catfish.

  2. *To make ribbon-like strips, hold vegetable vertically and cut thin strips using vegetable peeler.
