  1. 1 1/2 cups 240g / 8 1/2oz Rice - dry

  2. 1 1/2 Water

  3. 2 Red beans - canned

  4. 1 Garlic clove - minced (large)

  5. 1/4 cup 59ml Apple juice - frozen concentrate

  6. 2 tablespoons 30ml Tomato puree

  7. 1 Roma tomato - diced

  8. 1 Cumin

  9. 1 Thyme

  10. 1 Bay leaf

  1. Place rice and water in large pot. Bring to boil. Reduce temperature and simmer until water is absorbed.

  2. Place apple juice concentrate in non stick fry pan.

  3. Mince garlic and saute in juice. Add red beans, spices, tomato and tomato puree. Simmer until tomato is softened.
