  1. 5 c Thinly sliced onions

  2. 5 T Butter

  3. 1 T Oil

  4. 1 t Flour

  5. 1 t Salt

  6. 1 t Dijon-style mustard

  7. 1 t Pepper

  8. 6 c Beef broth

  9. 1 c Sherry

  10. 2 T Grated Swiss cheese

  11. 1 T Freshly grated parm. cheese

  1. In a deep skillet saute onions in butter and oil for 30-40 minutes or until they are well browned.

  2. Stir in flour, salt, mustard, and pepper to taste and cook the mixture for 2 minutes.

  3. Pour in the beef broth and sherry, and cook the soup over low heat, stirring until it comes to a boil.

  4. Simmer it for 30 minutes.

  5. Divide the soup among 6 individual flameproof soup bowls.

  6. Put in thick slice of French bread, toasted, in each bowl and top each slice with 2 T grated Swiss cheese and 1 T parmesan cheese.

  7. Put the bowls under a preheated broiler for 1-2 minutes.

  8. or until the cheese is melted and lightly browned.
