  1. LEMON CHICKEN

  2. 4 boned and skinned chicken breasts

  3. Juice of 2 lemons

  4. 1/2 cup flour

  5. 1/2 tsp. salt

  6. 1/4 tsp. pepper

  7. 1/4 tsp. paprika

  8. 1 Tbsp grated lemon peel

  9. 2 Tbsp brown sugar

  10. 1 Tbsp fresh lemon juice

  11. 1 Tbsp water

  12. 1 lemon, sliced thin

  13. Place chicken in a bowl or casserole. Cover with lemon juice and marinate in refrigerator for several hours or overnight, turning

  14. chicken periodically. Oven 350*. Combine flour, salt, pepper and paprika in plastic bag. Remove chicken breasts from marinade and coat each with flour by shaking in plastic bag. Place chicken in

  15. baking pan in single layer. Either peel the yellow (zest) from a

  16. lemon and chop it fine in your food processor , or grate with hand grater. Mix grated peel with brown sugar. Sprinkle the lemon

  17. zest-brown sugar mixture evenly over the chicken breasts. Combine

  18. lemon juice and water and sprinkle evenly over chicken. Put 1

  19. 35 -

  20. min. or until thoroughly cooked.
