  1. Ingredients (serves 6)

  2. 1 cup (250ml) full-fat milk

  3. 200ml thin cream

  4. 2 cinnamon sticks

  5. 1 egg

  6. 4 egg yolks

  7. 2 tsp cornflour

  8. 2 tbs caster sugar

  9. 1 tsp vanilla extract

  10. 1 tsp ground cinnamon

  1. Place milk, cream and cinnamon sticks in a saucepan over medium heat and bring to the boil. Remove from heat and leave to infuse for about 10 minutes.

  2. Whisk together the egg, egg yolks, cornflour, sugar and vanilla in a small bowl. Strain warm milk mixture into the egg mixture and stir to combine.

  3. Return to saucepan over low heat and cook, stirring, until mixture is thick enough to coat the back of a spoon.

  4. Add cinnamon and remove from heat.

  5. Cool slightly, then cover surface with plastic wrap to prevent a skin forming. Keep refrigerated until required.

  6. Serve with the crumble cake with berry sauce (see related recipe).
