  1. 1 teaspoon 5ml Eggplant (medium)

  2. 1 teaspoon 5ml Salt

  3. 1/4 teaspoon 1 1/3ml Pepper

  4. 2 Egg yolks - beaten

  5. 1 cup 146g / 5.1oz Grated American cheese

  6. Eggs - fried as needed

  1. Peel the eggplant and cut lengthwise in 1-inch slices. Soak in cold salted water for 1 hour. Drain and dry.

  2. Place the eggplant slices side by side in a buttered baking pan. Sprinkle with the salt and pepper and brush with the egg yolks. Sprinkle with the grated cheese. Bake in a 350 degree oven 30 minutes. Top with a fried egg for each serving. Serves 4 to 6.
