  1. 1/4 c Oil

  2. 4 lb Top round steak -- trimmed Into 1/4-inch cubes

  3. 6 c Water

  4. 5 6oz cans tomato paste

  5. 1/2 c Instant minced onion

  6. 2 1/2 tb Celery salt

  7. 3 tb Chili powder

  8. 1/2 ts Ground allspice

  9. 1/2 ts Ground cinnamon

  10. 1/2 ts Curry powder

  11. 1/2 ts Garlic powder

  12. 1/2 ts Coriander seed -- ground

  13. 1/2 ts Cumin seed -- ground

  14. 1/2 ts Ground ginger

  15. 1/2 ts Marjoram leaves -- crushed

  16. 1/2 ts Oregano leaves -- crushed

  17. 1/2 ts Paprika

  18. 1/2 ts Thyme leaves -- crushed

  19. 1/2 ts Sage leaves -- crushed Pinch red pepper -- ground

  20. 27 oz Can whole green chiles Drained, seeded -- & chopped

  21. 4 oz Bar milk chocolate -- broken

  1. Preparation : Heat 2 T oil in a large saucepan until hot. Add 1 lb beef and brown on all sides. Remove with a slotted spoon and set aside. Repeat until all beef is browned. Use additional oil as needed. Return all beef to saucepan. Add 4 cups of water, tomato paste, onions, celery salt, spices, herbs and green chiles; mix well. Boil, then reduce heat to simmer, covered, for 90 minutes, stirring occasionally. Add remaining water. Mix in chocolate; simmer, covered for 30 minutes, stirring often.
