  2. 10 oz. fresh spinach

  3. 1/4 lb Mushrooms, thinly sliced

  4. 1 Small red onion, peeled and sliced

  5. 8 Slices bacon, cut into 1-inch pieces

  6. 2 tsp Dijon or prepared spicy brown mustard

  7. 2 tsp Sugar

  8. 2 tsp Red wine vinegar

  9. 1 tsp Worcestershire sauce

  10. 3 Tbs Lemon juice

  11. 12 inch skillet over moderately high heat until crisp -- about 5 minutes. Drain on paper toweling and reserve. Pour off all but

  12. 5 tablespoons of the drippings. Reduce the heat to low. Add the mustard, sugar, vinegar, Worcestershire sauce, and lemon juice to the drippings. Stir to mix well. Pour the dressing over the salad, crumble the bacon over it, and toss thoroughly. Serve immediately.
