  2. Kay's Shadywood Showdown Chili

  7. 2 medium onion -- diced

  8. 2 bell pepper -- diced

  9. olive oil

  10. salt

  11. pepper

  12. garlic powder

  13. 2 1/2 pounds ground sirloin

  14. 4 tablespoons mole sauce

  15. 2 cans (8 oz.) ea. tomato sauce

  16. water

  17. 4 tablespoons chili powder

  18. 16 ounces kidney beans, canned (opt.)

  19. Saute half the onions and peppers in 1 tablespoon olive oil. Add salt,

  20. pepper and garlic powder to taste. Brown meat separately, leaving in

  21. chunks. Drain fat. Add onion/pepper mixture to meat. Add 3 tablespoons

  22. 2 to

  23. cans water and 3 tablespoons chili powder. Bring to a boil. Add remaining

  24. mole sauce, if desired. Simmer one hour. Season and stir occasionally.

  25. Saute remaining onion and peppers as above. Add to pot along with drained

  26. beans. Add final chili powder to taste. Finish heating about 15 minutes

  27. and serve with favorite fixin's.
