  2. Quick 'n Easy Mexican Bean Soup

  7. 4 slices bacon -- diced

  8. 1 medium onion -- chopped

  9. 30 ounces pinto beans (2 15 oz. cans) -- undrained

  10. 1 can chicken broth

  11. 1/2 cup water

  12. 1/4 to 1/3 cup loosely packed cilantro

  13. 1/3 cup picante sauce

  14. In a 3-quart saucepan, cook bacon until crisp. Remove with slotted spoon.

  15. Cook onion in drippings until tender but not brown. Return bacon to

  16. saucepan. Add remaining ingredients and bring to a boil, stirring

  17. occasionally. Reduce heat. Cover and simmer 15 minutes.

  18. 1 pound ground beef with the bacon. Also, add a

  19. 1/2 teaspoon ground cumin,

  20. 1 tablespoon chile

  21. powder and 3 small cloves garlic (crushed and sauteed with onion). - - - - - - - - - - - - - - - - - -
