  5. 4 c Tomato Juice

  6. 1 pt Mild Salsa (I used ChiChi's)

  7. 2 Bell Peppers, red

  8. 1 Cucumber, peeled, seeded

  9. 1 c Onion & Garlic croutons

  10. 1/2 c Chicken broth

  11. 1/3 c Fresh cilantro, chopped

  12. 4 lg Garlic cloves

  13. 2 T Balsamic or red wine vinegar

  14. 1 T Olive Oil

  15. 1 t Cumin, ground

  16. ds Tabasco sauce

  17. Coarsely chop all vegetables to ready for blending.

  18. Working in batches, blend all ingredients except hot sauce in processor to

  19. coarse puree. Transfer gazpacho to large bowl. Season to taste with hot

  20. sauce, salt and pepper. Refrigerate until well chilled, about 2 hours.

  21. Can be prepared the day ahead. Ladle into bowls and serve.
