  1. Brunch Casserole

  2. Yield: 7 servings

  3. 1 1/2 lb ground beef

  4. 1 onion large finely chopped

  5. 2 tb olive oil or butter

  6. 2 garlic cloves, minced

  7. 4 oz can mushrooms, drained and sliced

  8. 2 ts salt

  9. 1/2 ts nutmeg

  10. 1/2 ts oregano leaf

  11. 1/2 pk spinach chopped frozen, thawed drained

  12. 3 tb flour

  13. 6 eggs beaten

  14. 1/4 c milk scalded

  15. 1/2 c cheddar cheese sharp grated

  16. In skillet, lightly brown ground beef and onion in olive oil drain

  17. well. Place in well-greased crock-pot. Stir in remaining ingredients

  18. except eggs, milk and cheese until well blended. Beat eggs and milk

  19. together. Pour over other ingredients, stir well. Dust with

  20. 7 to 10 hours

  21. or until firm. Just before serving, sprinkle with grated cheese.

  22. 6 to 8 servings (About 2-1/2 quarts)
